Cooking Quarantine Style: Same Ingredients, Three Very Different Recipes

“Stay at home” orders and self-quarantines due to the pandemic, leave many of us limited on the number of trips we take to the grocery store. Unfortunately, when we do venture out it’s becoming more common to find scarcely stocked shelves with even the most basic necessities gone. That’s why getting ingredients that work for multiple recipes during this unprecedented time is a great solution. 

Here are 5 ingredients that create 3 very different recipes, sure to satisfy your whole family. 

Ingredients

  1. Chicken breast
  2. Cream of chicken soup
  3. Creamed corn
  4. Bread
  5. Pasta


Skillet Chicken with Creamed Corn


Warm and delicious, skillet chicken with creamed corn is the perfect family dinner. With just three ingredients you can create a fulfilling meal, perfect for times where we’re focused on conserving food. 

  1. Melt butter in a large nonstick skillet over medium-high heat.
  2. Add chicken and cook for 3-5 minutes on each side, until the internal temperature reaches 165 degrees.
  3. Remove the chicken to a plate and cover to keep warm.
  4. Add the creamed corn to the skillet, stirring to warm through for 2-3 minutes.
  5. Serve chicken and creamed corn with bread.

Chicken Casserole


If hearing the term chicken casserole doesn’t make you reminisce of family and community dinners, nothing will. Luckily, a mixture of creamed corn and cream of chicken soup makes the perfect base for this hearty dish that tastes better the next day. 

  1. Preheat your oven to 400 degrees
  2. Boil water for your pasta and cook according to package instructions. Drain water and set aside pasta.
  3. Cut chicken into pieces, sauté until cooked through. Set aside to cool.
  4. Take 2 slices of bread and break them up into crumbles
  5. Combine cream of chicken soup, creamed corn, cooked chicken, and pasta.
  6. Pour the chicken mixture into a 9x13 inch baking dish.
  7. Place bread crumbles over the chicken mixture.  
  8. Bake at 400°F. for 25 minutes.


Creamy Corn Soup


Great for lunch, creamy corn soup can be quickly prepared for the entire family. Throw in some shredded chicken, toast your bread and you have dinner too. 

  1. Add chicken breast to a large non-stick skillet with butter.
  2. Sauté on medium/high heat for 3-5 minutes on each side, until the internal temperature reaches 165 degrees.
  3. Remove the chicken, allowing it to cool for 15 minutes.
  4. Shred the chicken.
  5. Cook creamed corn and half a can of cream of chicken soup on medium/high heat.
  6. Add the shredded chicken.
  7. Serve with bread.
